Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your bunny-shaped silicone molds or cakesicle molds to ensure easy release later.
  2. In a large mixing bowl, combine 1 ½ cups all-purpose flour, 1 cup granulated sugar, ½ cup unsweetened cocoa powder, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt. Mix until well combined and set aside.
  3. In another bowl, whisk together 2 large eggs, ½ cup whole milk, ½ cup vegetable oil, and 1 tsp vanilla extract until smooth. This mixture should be creamy and light yellow in color.
  4. Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix; you want a smooth batter without any lumps.
  5. Carefully stir in ½ cup of boiling water. The batter will be thin, but that’s okay! This is what keeps your cakes moist.
