Ingredients
Scale
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 medium red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 4 slices provolone cheese (or your favorite cheese)
- 4 hoagie rolls or sub sandwich rolls
- Optional: hot sauce, for serving
Instructions
- Slice the chicken breasts into thin strips, about 1/2 inch wide.
- In a large bowl, combine the sliced chicken with olive oil, salt, black pepper, paprika, and Italian seasoning. Toss until well coated and let marinate for 15-20 minutes.
- In a large skillet, heat a tablespoon of olive oil over medium heat.
- Add the sliced onions and bell peppers, sauté for 5-7 minutes until softened and slightly caramelized.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Transfer the vegetables to a plate and set aside.
- In the same skillet, add the marinated chicken strips. Cook over medium-high heat for 5-7 minutes until cooked through (internal temperature should reach 165°F/75°C).
- Return the sautéed vegetables to the skillet, stir to combine, and cook for another 2-3 minutes.
- Lay the slices of provolone cheese over the mixture, cover with a lid for a couple of minutes to melt the cheese.
- Prepare hoagie rolls by lightly toasting them if desired.
- Scoop a generous portion of the chicken and vegetable mixture onto the bottom half of each hoagie roll.
- Drizzle with hot sauce if desired, then place the top half of the roll on.
- Serve warm and enjoy!
Notes
- For added flavor, marinate the chicken for a few hours or overnight.
- Customize with additional toppings like sautéed mushrooms, jalapeños, or spreads.
