  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 4 slices provolone cheese (or your favorite cheese)
  • 4 hoagie rolls or sub sandwich rolls
  • Optional: hot sauce, for serving

Instructions

  1. Slice the chicken breasts into thin strips, about 1/2 inch wide.
  2. In a large bowl, combine the sliced chicken with olive oil, salt, black pepper, paprika, and Italian seasoning. Toss until well coated and let marinate for 15-20 minutes.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat.
  4. Add the sliced onions and bell peppers, sauté for 5-7 minutes until softened and slightly caramelized.
  5. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  6. Transfer the vegetables to a plate and set aside.
  7. In the same skillet, add the marinated chicken strips. Cook over medium-high heat for 5-7 minutes until cooked through (internal temperature should reach 165°F/75°C).
  8. Return the sautéed vegetables to the skillet, stir to combine, and cook for another 2-3 minutes.
  9. Lay the slices of provolone cheese over the mixture, cover with a lid for a couple of minutes to melt the cheese.
  10. Prepare hoagie rolls by lightly toasting them if desired.
  11. Scoop a generous portion of the chicken and vegetable mixture onto the bottom half of each hoagie roll.
  12. Drizzle with hot sauce if desired, then place the top half of the roll on.
  13. Serve warm and enjoy!
