Description

Savor the flavors of a Chicken Caesar Flatbread Sandwich, featuring grilled chicken, fresh romaine, cherry tomatoes, and creamy Caesar dressing, all wrapped in warm flatbread. This quick and easy recipe is perfect for lunch or dinner, offering a satisfying meal that’s both delicious and customizable.

Ingredients

Scale
  • 2 large flatbreads (store-bought or homemade)
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup romaine lettuce, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • ¼ cup croutons (optional, for added crunch)
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. If you haven’t already cooked your chicken, season it with salt and pepper, then grill over medium heat for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let it rest for 5 minutes before shredding or dicing.
  2. Wash the romaine lettuce under cold water, dry it, and chop it into bite-sized pieces. Halve the cherry tomatoes and add them to the bowl with the lettuce.
  3. In a small bowl, combine the shredded chicken with the Caesar dressing, mixing well until evenly coated. Adjust seasoning with salt and pepper as needed.
  4. Lay one flatbread on a clean surface. Spread half of the chicken mixture over the flatbread, leaving a small border. Add chopped romaine and cherry tomatoes on top, followed by grated Parmesan cheese and croutons (if using). Drizzle with olive oil.
  5. Fold the flatbread in half or roll it up like a wrap. Repeat with the second flatbread and remaining ingredients.
  6. For a warm and crispy flatbread, grill or toast it in a preheated grill pan or skillet over medium heat for 2-3 minutes on each side until golden brown.
  7. Let the flatbread cool for a minute, then slice into halves or quarters. Serve immediately with extra Caesar dressing on the side for dipping.

Notes

  • For added flavor, consider marinating the chicken in your favorite spices before grilling.
  • Feel free to customize the toppings with other vegetables or additional cheese.
  • If you prefer a vegetarian option, substitute the chicken with grilled vegetables or chickpeas.
