- 1/2 teaspoon onion powder

Instructions
- Start by gathering all your ingredients. It’s always easier to have everything ready to go before you start cooking. This will make the process smoother and more enjoyable.
- In a medium saucepan, heat the olive oil over medium heat. This will help to prevent the cheese from sticking and burning.
- Once the oil is hot, add the cubed Velveeta cheese to the pan. Stir it gently as it begins to melt.
- Next, add the softened cream cheese to the pan. Stir continuously until both cheeses are fully melted and combined.
- Pour in the milk, starting with 1/2 cup. Stir it in and add more milk as needed to reach your desired consistency.
- Open the can of diced tomatoes and green chilies (Rotel) and pour it into the saucepan without draining. Stir to combine.
- Sprinkle in the garlic powder, onion powder, and cayenne pepper (if using). Stir until well combined.
- Add the shredded cheddar cheese and stir until melted and fully incorporated.
- Taste your queso and adjust the seasoning if needed. Add more garlic powder, onion powder, or salt if desired.
- If you like it spicier, add more cayenne pepper or diced jalapeños. Stir well after adding.
