- 2 pounds baby potatoes, halved or quartered
- 1 pound smoked sausage, sliced (kielbasa or andouille recommended)
- 1 cup shredded cheddar cheese
- 1 cup ranch dressing
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes thoroughly under cold water and scrub them to remove any dirt. Cut them in half or quarters for uniform cooking.
- Slice the smoked sausage into bite-sized pieces.
- In a large mixing bowl, combine the halved potatoes and sliced sausage.
- Drizzle the olive oil over the mixture.
- Add garlic powder, onion powder, paprika, salt, and pepper. Toss everything together until well coated.
- Spread the mixture evenly on a large baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
- While roasting, prepare the ranch dressing if making homemade.
- Once roasted, drizzle ranch dressing over the mixture and sprinkle with shredded cheddar cheese.
- Return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
- Remove from the oven, let cool for a couple of minutes, and garnish with chopped green onions and parsley.
- Serve hot as a main dish or hearty side.

- For a homemade ranch dressing, mix 1 cup of sour cream, 1 tablespoon of dried dill, 1 teaspoon of garlic powder, and a splash of lemon juice.
