  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly under cold water and scrub them to remove any dirt. Cut them in half or quarters for uniform cooking.
  3. Slice the smoked sausage into bite-sized pieces.
  4. In a large mixing bowl, combine the halved potatoes and sliced sausage.
  5. Drizzle the olive oil over the mixture.
  6. Add garlic powder, onion powder, paprika, salt, and pepper. Toss everything together until well coated.
  7. Spread the mixture evenly on a large baking sheet in a single layer.
  8. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  9. While roasting, prepare the ranch dressing if making homemade.
  10. Once roasted, drizzle ranch dressing over the mixture and sprinkle with shredded cheddar cheese.
  11. Return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  12. Remove from the oven, let cool for a couple of minutes, and garnish with chopped green onions and parsley.
