  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 medium tomato, diced
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness on a cutting board.
  3. In a small bowl, mix minced garlic, olive oil, Italian seasoning, salt, and pepper. Rub this mixture over the chicken breasts and let marinate for 15-20 minutes (or up to 2 hours in the fridge).
  4. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  5. Cook the marinated chicken breasts for 6-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part.
  6. Remove the chicken from the skillet and let it rest for a few minutes before shredding it with two forks.
  7. In a large mixing bowl, combine the shredded chicken with mozzarella and cheddar cheese.
  8. Lay a flour tortilla flat and place a portion of the chicken and cheese mixture in the center.
  9. Add fresh spinach leaves and diced tomatoes on top. Drizzle with ranch dressing if desired.
  10. Fold in the sides of the tortilla and roll it up tightly from the bottom.
  11. Repeat the assembly for the remaining tortillas and filling.
  12. In the same skillet, add more olive oil and heat over medium heat.
  13. Place the wrapped tortillas seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  14. Alternatively, use a panini press or grill for a different texture.
  15. Remove the wraps from the skillet, let cool for a minute, and slice them in half diagonally.
  16. Arrange on a serving platter and garnish with fresh parsley if desired. Serve with extra ranch dressing or your favorite dipping sauce.
