- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 4 tablespoons olive oil
- 4 cloves garlic, minced

- Salt and pepper to taste
- 1 cup fresh spinach leaves
- 1 medium tomato, diced
- 1/2 cup ranch dressing (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness on a cutting board.
- In a small bowl, mix minced garlic, olive oil, Italian seasoning, salt, and pepper. Rub this mixture over the chicken breasts and let marinate for 15-20 minutes (or up to 2 hours in the fridge).
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
- Cook the marinated chicken breasts for 6-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part.
- Remove the chicken from the skillet and let it rest for a few minutes before shredding it with two forks.
- In a large mixing bowl, combine the shredded chicken with mozzarella and cheddar cheese.
- Lay a flour tortilla flat and place a portion of the chicken and cheese mixture in the center.
- Add fresh spinach leaves and diced tomatoes on top. Drizzle with ranch dressing if desired.
- Fold in the sides of the tortilla and roll it up tightly from the bottom.
- Repeat the assembly for the remaining tortillas and filling.
- In the same skillet, add more olive oil and heat over medium heat.
- Place the wrapped tortillas seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
- Alternatively, use a panini press or grill for a different texture.
- Remove the wraps from the skillet, let cool for a minute, and slice them in half diagonally.
- Arrange on a serving platter and garnish with fresh parsley if desired. Serve with extra ranch dressing or your favorite dipping sauce.
