Ingredients

  • Elbow macaroni
  • Fresh broccoli florets
  • Sharp cheddar cheese
  • Mozzarella cheese
  • Whole milk
  • Unsalted butter
  • Flour
  • Breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In the same pot, blanch the broccoli in boiling water for 2-3 minutes until bright green, then drain and set aside with the macaroni.
  4. In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 4 tablespoons of flour to create a roux, cooking for about a minute.
  5. Gradually whisk in 3 cups of milk, stirring until the mixture thickens (about 5-7 minutes). Remove from heat and stir in 2 cups of shredded cheddar cheese until melted and smooth.
  6. In a large mixing bowl, combine the cooked macaroni, broccoli, and cheese sauce. Stir well until everything is evenly coated.
  7. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  8. In a small bowl, mix together 1 cup of breadcrumbs with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the macaroni and cheese.
  9. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
  10. Let it cool for a few minutes before serving. Enjoy your comforting Broccoli and Cheese Baked Macaroni!
