- Preheat your grill to medium-high heat. If using an oven, set it to 400°F (200°C).
- In a large bowl, combine the ground beef, breadcrumbs, one egg, minced garlic, chopped parsley, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the meatballs tender.
- Roll the mixture into small meatballs, about 1 inch in diameter. You should get around 20-24 meatballs, depending on the size.
- Chop the bell peppers and onions into chunks, aiming for pieces that are similar in size to your meatballs for even cooking.
- Take your soaked skewers and thread a meatball, followed by a piece of bell pepper, then an onion chunk. Repeat this pattern until the skewer is filled, leaving some space at the ends for handling.
- Generously brush the assembled skewers with your BBQ sauce.
- Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the meatballs are cooked through and have a nice char. If using an oven, place the skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
