  • Wooden or metal skewers

Instructions

  1. Preheat your grill to medium-high heat. If using an oven, set it to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, one egg, minced garlic, chopped parsley, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the meatballs tender.
  3. Roll the mixture into small meatballs, about 1 inch in diameter. You should get around 20-24 meatballs, depending on the size.
  4. Chop the bell peppers and onions into chunks, aiming for pieces that are similar in size to your meatballs for even cooking.
  5. Take your soaked skewers and thread a meatball, followed by a piece of bell pepper, then an onion chunk. Repeat this pattern until the skewer is filled, leaving some space at the ends for handling.
  6. Generously brush the assembled skewers with your BBQ sauce.
  7. Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the meatballs are cooked through and have a nice char. If using an oven, place the skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
