- 1 pound of bacon, chopped
- 1 bag (32 ounces) frozen tater tots
- 12 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (optional)
- 1/2 cup diced onion (optional)
- Salt and pepper to taste
- Cooking spray or oil for greasing the baking dish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the chopped bacon until crispy (8-10 minutes). Transfer to a paper towel-lined plate to drain.
- Drain most of the bacon grease, leaving about a tablespoon. Sauté diced onions and bell peppers in the skillet for about 5 minutes until soft.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Spray a 9×13 inch baking dish with cooking spray or lightly coat with oil.
- Spread the frozen tater tots evenly across the bottom of the baking dish.
- Sprinkle the cooked bacon over the tater tots, followed by the sautéed vegetables if using.
- Pour the egg mixture over the tater tots, bacon, and vegetables, pressing down gently with a spatula.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 45-50 minutes until the eggs are set and the top is golden brown. Cover with foil if browning too quickly.
- Insert a knife or toothpick into the center; it should come out clean when done.
- Allow the casserole to cool for about 10 minutes before slicing.
- Cut into squares and serve warm. Garnish with green onions or fresh herbs if desired.
- Cool completely before storing leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven.
