  • 1 pound of bacon, chopped
  • 1 bag (32 ounces) frozen tater tots
  • 12 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (optional)
  • 1/2 cup diced onion (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the baking dish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy (8-10 minutes). Transfer to a paper towel-lined plate to drain.
  3. Drain most of the bacon grease, leaving about a tablespoon. Sauté diced onions and bell peppers in the skillet for about 5 minutes until soft.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Spray a 9×13 inch baking dish with cooking spray or lightly coat with oil.
  6. Spread the frozen tater tots evenly across the bottom of the baking dish.
  7. Sprinkle the cooked bacon over the tater tots, followed by the sautéed vegetables if using.
  8. Pour the egg mixture over the tater tots, bacon, and vegetables, pressing down gently with a spatula.
  9. Sprinkle shredded cheddar cheese evenly over the top.
  10. Bake in the preheated oven for 45-50 minutes until the eggs are set and the top is golden brown. Cover with foil if browning too quickly.
  11. Insert a knife or toothpick into the center; it should come out clean when done.
  12. Allow the casserole to cool for about 10 minutes before slicing.
  13. Cut into squares and serve warm. Garnish with green onions or fresh herbs if desired.
  14. Cool completely before storing leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven.
